We created this pasta in response to the growing population of people who cannot properly digest wheat or wheat products. We believe you will find the flavor and texture of our gluten-free pastas to be as rich as any gluten-based product in our portfolio.

Please note that our gluten-free pastas take a little longer to cook than traditional pasta – about 14-16 minutes.

Out of concern for those with high gluten sensitivity, we want you to know that Pappardelle’s makes its gluten-free products in the same general area of our facility where our gluten-based products are made. We do note this on the label of our gluten-free products. Pappardelle’s takes careful steps to isolate its gluten-free line as much as possible, including having dedicated pasta equipment, drying racks and drying rooms, and handling its gluten-free products and ingredients in as protected manner as possible. Pappardelle’s believes its efforts are highly successful and has independent lab tests, which demonstrate non-detect of gluten at 10-ppm test level. To put these results in perspective, the FDA has proposed a standard that would require products labeled as “gluten-free” to be non-detect at 20-ppm. Since the gluten-free products are made in the same general vicinity as our gluten-based products, we cannot guarantee them to be 100% gluten-free. Please consider this before consuming if you are very sensitive to gluten.
